Blueberry & Green Apple Compote
Simple compote to have on hand. Turns ordinary oatmeal into something truly special.
zest of one lemon, preferably Meyer
medium sized Granny Smith apple, diced into small pieces
12 ounce bag of frozen blueberries (the wild organic ones at Trader Joe’s work nicely)small squeeze of lemon
1 teaspoon vanilla extract
Place the lemon zest, diced apple, blueberries and 2 tablespoons of water in medium sized pot. Squeeze in just a bit of lemon juice.
Over medium heat, bring the mixture to a boil and then gently simmer until the mixture is well combined and fruit has softened.
Remove the pot from the heat, stir in the vanilla and let it sit to come to room temperature. Store the compote in mason jars and refrigerate. Will last for several days and tastes even better the next day.
