Easy Artichoke Soup
I am almost embarrassed to call this a recipe. 4 simple ingredients (not including salt and pepper). Minutes to make but tastes restaurant fancy.
1 tablespoon olive oil
1 medium yellow onion, chopped
2 twelve ounce frozen bags of artichokes hearts
2 medium (or 3 small) yellow potatoes, peeled and chopped
salt and pepper
Place the artichoke hearts and chopped potatoes in a medium sized pot and cover with water.
Cook on medium-high heat until the potatoes are tender.
Warm the olive oil in a pot over medium heat. Throw in the chopped onions and sauté until soft and golden brown. Add the potatoes and artichokes to the onion mixture. Add enough water to cover by 1 inch and about ½ to 1 teaspoon of salt. Bring to a boil and then simmer until the potatoes are cooked through and tender.
Transfer the soup to a blender and puree until smooth. It may require to separate batches of blending.
Return the soup to the pot. Season with additional salt and pepper to taste and thin with additional water to desired consistency.
