These bars are great for an afternoon pick me up, a quick breakfast on the go or even a sweet treat for dessert. Be adventurous and play around with the dried fruit, nuts and/or seeds and additional seasonings.
2 cups old fashioned oats
½ cup walnuts
¼ cup ground flax seed
½ teaspoon cinnamon
pinch of sea salt
2 ripe bananas
½ cup raisins
¼ to ½ cup dark chocolate chips (optional)
roughly 1 tablespoon sesame seeds
¼ cup dried, unsweetened coconut
Preheat the oven to 350 degrees.
Pulse the oats a few times in a food processor and empty into a bowl.
Pulses the walnuts (esp if they are large chunks or walnut halves) in the food processor a few times and empty into bowl with the oats.
Add the ground flax seed, cinnamon, salt and mix through.
Place the bananas in the food processor (no need to clean out in between) and pulse until the bananas are roughly pureed, being careful not to over-process (a few chunks are ok but you don’t want any big pieces).
Add the bananas to the oat mixture and mix in. Add the raisins and optional chocolate chips.
Line a 9 inch square baking pan with parchment paper, allowing for an overhang on the sides. Press the “dough” into the baking sheet. You can use the bottom of a small bowl or measuring cup to smooth the filling into the pan. Sprinkle the sesame seeds and then coconut on top. Gently press into the dough.
Bake at 350 degrees for about 20 minutes.
