Double Chocolate Almond Cookies
1 tablespoon ground flax seed
½ cup almond butter
½ cup maple syrup
1 teaspoon vanilla extract
1 ½ cups oat flour
½ teaspoon baking soda
½ teaspoon baking powder
⅓ cup unsweetened cocoa powder
1 cup dark chocolate chips
½ cup toasted almonds (slivered or chopped)

Make a flax egg by combining the ground flax seed with 3 tablespoons of water and set aside.
In a medium bowl mix together the almond butter, maple syrup and vanilla. Sift together the oat flour, baking soda, baking powder and cocoa right over the wet ingredients. Mix the wet and dry ingredients together. Fold in chocolate chips and almonds. Using an ice cream scoop, place the cookie dough on a parchment lined baking sheet and gently press down to flatten slightly. Sprinkle a little salt on each cookie.
Bake at 350 F for 10-15 minutes just until set. Cool on baking rack. Enjoy!
