Next Level Broccoli

This recipe should really be called Next LEVELS broccoli because there are a few variations that you can try based on how adventurous your crew is. The first version is to roast the broccoli, as I shared in my video, Sheet Pan Dinner: A Simple Mealtime Solution. To add a little zip, you can squeeze a bit of lemon juice just before serving. The full version of the recipe adds a few additional ingredients to give broccoli a restaurant-style makeover.

  • 1 large bunch broccoli
  • 3 teaspoons olive oil, divided
  • 1/2 to 1 teaspoon salt
  • freshly ground black pepper to taste
  • 1 to 2 cloves garlic, minced
  • zest one lemon
  • 1/4 to 1/2 teaspoon red pepper flakes
  • juice of half a lemon

  • Preheat the oven to 425 ° F.
  • Trim off the broccoli florets into roughly even-sized pieces. Trim the rough edges of the stalks and slice them into thin pieces. Place the florets and stems onto a baking sheet.
  • Drizzle about one teaspoon of olive oil on to the broccoli. Sprinkle on salt and freshly ground black pepper to taste. Toss to combine.
  • Place in your preheated oven and roast for about 20 minutes.
  • While the broccoli is roasting, prepare the garlic and lemon mixture. In a small bowl, combine the minced garlic, lemon zest, red pepper flakes, and an additional 2 teaspoons of olive oil. Mix to combine and allow the flavors to meld while the broccoli roasts.
  • Once the broccoli is almost done roasting (about 5 to 10 minutes ahead of being done), pull the baking tray out of the oven and drizzle the mixture on top of the broccoli. Mix to combine, and place the tray back in the oven to roast for an additional 5 to 10 minutes until the broccoli is slightly browned.
  • Finish with a squeeze of lemon and enjoy!
