Tofu Scramble

Tofu Scramble

  • 16 ounce package of firm tofu, pressed to remove excess water

  • 1 tablespoon low sodium tamari or soy sauce
  • 1 tablespoon tahini
  • 3 tablespoons nutritional yeast
  • 1/2 teaspoon garlic powder or garlic granules
  • 1/2 teaspoon ground turmeric
  • 2 to 3 teaspoons olive oil
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 small onion, finely chopped
  • 2-3 cups greens of choice, chopped
  • salt and pepper to tasted
  • 1/4 cup fresh herbs (parsley, cilantro)
  • optional toppings hot sauce, salsa, etc.


  • Crumble the tofu into a medium-sized bowl. Add the tamari, tahini, nutritional yeast, garlic powder, and turmeric. Mix to combine and set aside while chopping the vegetables.
  • Warm the olive oil in a sauté pan and add the red bell pepper and onions. Sauté for about 5 minutes until golden brown.
  • Add the tofu to the pan and sauté for an additional 10 to 15 minutes until the tofu is warmed through and slightly browned.
  • Stir in the greens and sauté until wilted.
  • Season with salt and pepper to taste.
  • Top with optional fresh herbs and additional toppings.
